Apple Cake / Tort de mere
I love apples, so pretty often I make apple desserts: apple pie, baked apples with cream cheese filling, or this apple cake. This time I grated the apples and drained the juice (which I savoured 🙂 ) (or you can cook them in a pot, until the juice is evaporated), but other times I cut them into cubes, which is much easier to make, and saves a lot of time. |
Ingredients
(for a round 20 cm oven dish) 2-3 large apples (or more, if they are small) 3 eggs 70 g flour 50 g sugar 3 tbsp water 1 tsp baking powder cinnamon butter (for the oven dish) |
Ingrediente
How to make
Butter a round oven dish. Set aside. Cut apples into cubes or grate them on large. Mix with cinnamon. (If you grate them, squeeze the juice or cook them in a pot, until juice evaporates.) Place apples in the buttered oven dish. Separate egg whites and yolks. Whip egg whites. In a separate bowl, mix egg yolks with sugar, using a hand mixer, until it turns pale. Add flour, mixed with baking powder, then water. Gently fold in the whipped egg whites, using a wooden spoon. Pour over the apples in the oven dish. Bake in the preheated oven at 180°C for 35-40 minutes or until a toothpick inserted comes out clean. Take out of the oven, let cool for 10 minutes, then turn over on a cooling rack and let cool completely. Optionally you can sprinkle confectioner’s sugar on top. |
